Botanical Paradise: The Plant-Based Approach of Herbivore
Replacing the restaurant Locavore, Herbivore marks a significant shift, adopting the concept of 'all flora, no fauna' dining. Chef and owner Eelke Plasmeijer said, 'Locavore always had a plant-based tasting menu called Herbivore, and we have long found alternatives to animal protein, as well as avoided dairy products. We took a step to create a space where we could focus on celebrating local plants, and this makes a lot of sense to us.'
