For two days only, Santanera welcomes one of Sydney’s most celebrated chefs, Scott McComas-Williams, for a special kitchen takeover straight from the heart of Australia’s buzzing food scene.
Known for his bold, ingredient-driven approach to Italian cuisine, Scott is the Executive Chef of the Love Tilly Group, and a longtime friend of Santanera’s own Chef Andrés Becerra. Their story began over a decade ago in the high-energy kitchen of MoVida Aqui in Melbourne, and now they reunite in Bali for one unforgettable weekend.
Scott will present a five-course set menu that highlights the best of Ragazzi’s iconic handmade pastas and refined flavor combinations—from L’Escala anchovies with woodfired sourdough, to a lineup of perfectly balanced pasta dishes like Cacio e Pepe Spaghetti, and Jerusalem Artichoke Rotolo. Optional Scallop & Prawn Fagottini and shaved Australian winter truffle are available for those wanting to go all-in. The main event features Carrara Wagyu Picanha Steak, followed by a decadent Salted Caramel & Chocolate Tart with vanilla gelato.
