The evening brings together two talented chefs: Chef Ignacio Moreno Tur and Chef Javier Vicente Rejas. Chef Ignacio, now the Director of Food and Beverage at Six Senses Uluwatu, brings a creative and sustainable approach to his dishes. With experience from top kitchens, including the three Michelin-starred Martin Berasategui Restaurant in Barcelona, Ignacio seamlessly blends Balinese ingredients with traditional Spanish culinary techniques.
Chef Javier Vicente Rejas, a proud ambassador of Valencia—the birthplace of the iconic Paella Valenciana—joins Ignacio for this extraordinary event. Known for his global exploration of Spanish cuisine and co-founder of the London Paella School, Javier infuses every dish with authenticity and passion.
The evening will begin with a refreshing Cava Joseph Masachs welcome drink, followed by a delectable tapas selection featuring bites like ‘Gilda,’ Jamon Iberico, and Patata Brava, perfectly paired with wine. The main courses will highlight local and Spanish flavors, including Arroz con Pitu (free-range chicken) and Caldereta (yellowfin tuna). To finish on a sweet note, guests will enjoy indulgent desserts such as Frozen Sangria and Pa amb Xocolata, made with Tabanan’s 80% chocolate.
